Best ever Muffins!!!! Xxx

  • 2 eggs (medium)
  • 200g caster sugar
  • 250ml milk (semi-skimmed or whole)
  • 125ml vegetable oil
  • 400g plain flour
  • 3tsp baking powder
  • 1 tsp salt
  • OR
  • 400g self raising flour
  • You will also need:
  • A muffin tray
  • Muffin paper cases
  • NB: If you want to do chocolate flavoured muffins substitute 100g of flour for cocoa (DO NOT USE DRINKING CHOCOLATE)

Method

  1. Preheat oven to Gas Mark 6 or a medium temperature. Line muffin tray with paper muffin cases.
  2. Beat the eggs in a mixing bowl and then mix in the oil and milk. Add the sugar and whisk until dissolved.
  3. Sift in the dry ingrediants: flour, baking powder and salt and mix until smooth. NB: add any extra ingrediants now eg. chocolate chips/fruit
  4. Fill muffin cases TWO THIRDS full (this is important for the perfect size muffins) and bake in the middle of the oven for 25 minutes (approx. depending on your oven)
  5. Leave to cool (or enjoy warm!)

MICROWAVE BROWNIES!!! :D

Ingredients

Makes: 16 brownies

  • 150g butter
  • 65g unsweetened cocoa powder
  • 200g sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 100g plain flour
Method

Prep:5min  ›  Cook:5min  ›  Extra time:10min cooling  ›  Ready in:20min 

  1. Melt the butter in high for about 30 to 40 seconds. Add the sugar, cocoa and vanilla in that order and mix well.
  2. Add the eggs, slightly whipping after each one. Add the flour and mix well.
  3. Grease a microwave safe dish and spoon in the brownie mixture. Cook on high for 4 to 5 minutes (the more powerful your microwave the less time it takes). Let rest for 10 minutes before cutting.

Tip

When you take the brownies from the oven the centre will look undone, but it keeps cooking when resting. And if you leave them overnight in the fridge, the next day they will be even more consistent.

Substitution

This recipe also works well with 3 eggs, 100g butter, 65g to 125g of flour, 45g to 65g cocoa. So, don’t worry if you don’t have enough of any of the ingredients, but make sure not to change more than one amount at a time!

Other ideas

You can also stir in 120g of nuts, or 60g of nuts and 80g chocolate chips, or only chocolate chips! Or you can sprinkle some chopped nuts or pistachio nuts on top before microwaving.

 

Chocolate and Orange brownies!!

sorry we haven’t posted in a while! Xxx 😀 Well this is an amazing recipe that my friend Megan brought to my attention…CHOCOLATE AND ORANGE BROWNIES WITH CHOCOLATE CHIPS!!!!! AMAZING!! So anyway, heres the recipe:

225g butter

200g dark chocolate

275 sugar

zest of one large orange

4 eggs

1 tsp vanilla

pinch of salt

110g plain flour

30g cocoa powder

1 tsp baking powder

110g of chocolate chips ( any will do…WHO DAM CARES IT’S CHOCOLATE!!) 🙂

1.Preheat the oven to 180 degrees/350f/gas mark 4. Line a square tin with parchment paper.

2.Put the butter,chocolate and sugar in a large heatproof pan and set it over some warm water.

3.Let the butter and chocolate melt, stir occasionally. Remove and set aside to cool!

4.Prepare the orange zest and juice then whisk together until the eggs,vanilla and salt are combined with the orange. 

5. Whisk the egg mixture into the cooled melted chocolate.

6. Sift in the cocoa and baking powder and flour onto the chocolate mixture and fold it in. 

7.Now add the chocolate chips.POur the mixture into the tin and cook for 30-35 minutes!

SPICY POTATO SOUP!

Ingredients

  • 2 tbsp sunflower or groundnut oil
  • knob of butter
  • 1 large onion
  • 1 tbsp medium curry powder
  • 2 large baking potatoes, cut into roughly 1cm cubes
  • 500ml milk
  • 1 vegetable stock cube
  • 1 – 2 tsp mango chutney (optional)
  • 1 tbsp coriander leaves (optional)

Method

  1. Warm the oil and butter together in a saucepan and add the chopped onion. Cover with a lid and cook over a medium heat for a few mins before adding the curry powder. Add the potato and continue to cook for a further 5-10 mins.
  2. Pour the milk and 500ml water over the potatoes, then sprinkle in the vegetable stock cube. Bring to a simmer and cook for 15-20 mins until the potatoes are completely tender. Season with a pinch of salt and blitz in a blender until smooth. For a slightly sweet touch, add the mango chutney, a teaspoon at a time to suit your taste, liquidising until smooth. Divide the soup into bowls, finishing with the coriander leaves if you have them.                    Freya x 🙂

NUTELLA MUG CAKE!!!

You will need:

2 tablespoons of self raising flour

2 tablespoons of cocoa or hot chocolate mix

2 tablespoons of any sugar

1 egg

1 tablespoon of nutella

1 tablespoon of oil

1 tablespoon of milk

1. Combine all of the above in a bowl!

2. Pour into a mug

3. Put it in the microwave and heat it for 30 seconds, if it isn’t done then put it in for another 30 until your cake is nice and fudgy!

4. PING!!! Dig in!!!
